Method :

Mix all the ingredients together at first speed until you obtain a homogeneous dough.
This is the basic dough to which you can add various ingredients like : Belcolade K10, Ladyfruit Cubi Frutti, Carat Chococroc, nuts, Ladyfruit Classic & Summum, …

Usage rate : 12 % on total weight or if you use Ladyfruit Classic or Summum, the recommended usage rate.

Then continue as follows :
Scoop : form each cookie with an ice cream scoop and put this on the baking plate. Leave enough space between each cookie. It is not necessary to flatten each cookie before baking.
Cut out : roll out the dough until you obtain the desired thickness (it is not necessary to roll the dough until you obtain a thin layer). Cut out with a cutter according to desired shape and weight.
Cut : make tubes with a diameter of +/- 4 cm and cut cookies according to desired weight. For this method, you can use a vanilla dough and a chocolate dough to make a cookie with a marbled effect.
For all methods, you can easily keep the dough in the freezer (maximum 3 months) or in the fridge (max. 1 week) before baking.

Always bake with closed key.

Floor oven 170°C/338°F +/- 17 minutes
Bake off 155°C/311°F +/- 15 minutes
Rotative oven 180°C/356°F +/- 15 minutes

This gives a cookie which is soft inside and crusty on the outside.
Shelflife : 3 days
For a dryer cookie, just bake a little longer.
Shelflife : 7 days
