Here is a very effective recipe to prepare delicious muffins.

Method :

Add alternately the ingredients to the Tegral Satin Creme Cake, starting with the eggs, oil and then the water.

Mix during 3 minutes in second speed (with spatula).

This is your basic dough. Add 12 % of nuts, chocolate chips, … (12 % on total weight).

Divide the dough in the muffin cups with a piping bag, ice cream scoop, piping machine, …

Baking recommendations for muffins from 80 to 120 g :

  1. Floor oven : 220°C / 428°F during 17 minutes (after 8 minutes steam).
  2. Rotative oven : 190°C / 374°F during 17 minutes.
  3. Bake off : 190°C / 374°F ® 155°C / 311°F during 18 minutes.

It’s very important that the muffin is baked in a warm oven in order to have a nice burst open muffin. It’s possible that the upper side will form a crust before it can burst open. By giving steam regularly, the muffin will get the chance to burst open and bake in a regular way.

In order to obtain a muffin with the famous mushroom effect, you should bake as follows :

  1. Floor oven : 170°C / 338°F during 23 minutes
  2. Bake off : 140°C / 220°F during 12 minutes or 190°C / 310°F during 8 minutes
  3. Rotative oven : 160°C / 320°F during 22 minutes
